We have recently acquired a Hobart AM14 Dishwasher. The plate shows it should be wired for 208v 3 phase. When the electrician started wiring the unit at the controller terminal there were only 3 wires Black, white and a green as if it were wired for 120v from the power source. There are seven wires to the motor 3 larger with 1 turned back and 4 smaller going to the control card. There are only 2 wires in and 2 wires out on the 3 pole relays have been used to  Further investigation revealed the motor terminal having an optimizing plug for high and low. Please tell me what High and Low represents that we may apply the proper voltage. It looks as though there have been some field changes from 3 phase to single phase.

    The high/low indicates that you have a dual voltage motor .... it can be used for 208 or 460 v, depending how that plate at the motor terminals is oriented.  Although the original nameplate indicates 3 phase, your machine may have been rebuilt with a single phase motor, then rewired ofor single phase.  Only the motor and heaters are usually 3 phase, the controls and all else are single phase from the factory.  These motors are quite expensive, so if someone had a single phase available he probably saved money by reworking the whole unit.
