   the answer to your question boils down to economics and performance.  Convection vs. conventional ovens is a difference in both time and temperature in favor of convection ovens where the amount of time baling is reduced as well as the amount of energy spent which results in a cheaper product at a faster time.  It would seem that there is no argument in this respect.  Of course you will have to adjust all of your baking times for a convection scenario.  Generally between 15% and 20% reduction in baking time.  There will also be no need to preheat the oven any more so that too will save money.
   
   As to gas vs. electric it comes down to economics and performance as well as up keep in the long run
   
   An electric oven will be more expensive both in price and in the electric bill at the end of the month then a gas oven but it will not require any additional installation of gas lines and so forth.  It will also be more expensive to maintain should anything breakdown in the electrical resistors that generate the heat.  The gas oven however, represents a significant safety risk as compared to an electric oven.  If you live in a high risk earthquake or tornado or even hurricane zone then I would suggest you go with an electric oven for its superior safety factors in those regions.  Otherwise a gas oven will be a better performer and cost saver over the long run.
