Gluten is a protein composite that is derived from wheat, barley and rye. Gluten is found in foods that are processed from the above grains, used to add elasticity to dough in order to help it rise and hold its shape. Gluten is also a source of protein that is added to certain foods that are low in protein.
The National Institue of Health estimates that between 0.5 and 1.0 per cent of Americans have a gluten sensitivity caused by celiac disease, which is an abnormal immune reaction to foods containing gluten.
For those who do not have celiac disease, there is quite a bit of debate surrounding whether gluten is good for us or not. Books like Wheat Belly by cardiologist William Davis argues that wheat and gluten free diets lead to healthier lives, higher energy levels and reduced abdomial fat storage.
