This recipe for Enchiladas is so simple you can invite your kids to join in. You can use beef or just cheese depending on your mood. The sauce can be a bit messy, so wear an apron! Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Ingredients: • 12 corn tortillas • 1 28oz can of red enchilada sauce • 2 cups (16 oz) mozzarella or queso blanco • 1 1/2 cups meat (optional) shredded beef or chicken • 2-3 tablespoons oil Preparation: 1. Coat each tortilla with oil utilising your hands or a brush. Spread out on a biscuit sheet or ovenbaking bowl and ovenbake in a 500 stage baking oven for about 7 minutes. Take out to cooling until they are moderately hot to the touch. 2. The dairy cheese can be shredded, or just slash into pieces 3-4 inches long, and 1/4 inch thick. (Or wider if you like them actually cheesy.) 3. Pour just sufficient dressing in the base of a 9x13 glass ovenbaking bowl to cover it. Pour remainder of the dressing in a large bowl. Dip tortillas, one at a time, in the basin to outer garment with sauce. 4. Lay the tortilla in ovenbaking bowl and if you're utilising the beef, put in about 2-3 tablespoons. Place the dairy cheese on peak of the meat. Fold one for demonstration over the dairy cheese, then the other one, and then turn the entire thing over, bent edge down, in ovenbaking dish. Repeat for each tortilla. Sprinkle any leftover dressing and/or dairy cheese on peak of enchiladas. 5. Place in 400 stage baking oven for 15 minutes or until dairy cheese is melted.
