I overheard this guy in a nice suit talking about these cordovan leather shoes he had on and how they cost him hundreds of dollars. Did I miss something? Aren't those just regular leather shoes?

Regular leather shoes and other such goods are made from leather that is derived from cattle hide. Cordovan leather on the other hand comes from horses, in particular it is made from the flat muscle underneath the hide on the rump of a horse.

Cordovan leather is used mainly in shoe making and is considered a better alternative than regular cattle leather due to added durability and protection. Such shoes are an investment as compared to other shoes however if well taken care of they can last in great condition for years.
